Why I love Autumn: Reason #436

I look forward to this most favoritest season of mine for many reasons, not the least of which is the cooking of the dish I'm about to share with you.  Butternut Squash Risotto.  It's seriously ambrosial, you guys. The recipe comes from my food idol Ina Garten, aka Barefoot Contessa. I own every last one of her books and have never made a bad recipe from them and TiVo her food network show just to watch her messy genius in action and to spy on which brands she uses.

 From dozens of favorite recipes of her's too many to name, this one is definitely up there.  The trick to making it taste like revelry in your mouth is to use homemade chicken stock, and not broth in a box.  Good pancetta ie Italian bacon, and good Parmesan ie not Kraft in a can are my other helpful hints *wink*, *thumbs up*.
